Birria Mac and Cheese Quesadilla

When two comfort food favorites collide, magic happens. This Birria Mac & Cheese Quesadilla takes mac and cheese and pairs it with our savory Beef Birria, all wrapped in a golden, toasty tortilla.

Ingredients

  • 2 medium or 1 large flour tortilla
  • 1/2 tbsp butter
  • ½ cup shredded cheddar + pepper jack blend (divided)
  • ½ cup macaroni and cheese (prepared)
  • 1 pack Old Hacienda Beef Birria, consomé reserved for dipping

Directions

  1. Spread a thin layer of butter on one side of a tortilla and place it butter-side down in a skillet over medium heat.
  2. Sprinkle a layer of shredded cheese directly onto the tortilla.
  3. Spoon on the mac and cheese, then layer on the Old Hacienda Beef Birria. Add another sprinkle of shredded cheese to help it all stick together.
  4. Top with the second tortilla and press down lightly.
  5. Cook until toasty and the cheese is melted through.
  6. Serve with reserved consomé.
