Birria Mac and Cheese Quesadilla

When two comfort food favorites collide, magic happens. This Birria Mac & Cheese Quesadilla takes mac and cheese and pairs it with our savory Beef Birria, all wrapped in a golden, toasty tortilla.
Ingredients
- 2 medium or 1 large flour tortilla
- 1/2 tbsp butter
- ½ cup shredded cheddar + pepper jack blend (divided)
- ½ cup macaroni and cheese (prepared)
- 1 pack Old Hacienda Beef Birria, consomé reserved for dipping
Directions
- Spread a thin layer of butter on one side of a tortilla and place it butter-side down in a skillet over medium heat.
- Sprinkle a layer of shredded cheese directly onto the tortilla.
- Spoon on the mac and cheese, then layer on the Old Hacienda Beef Birria. Add another sprinkle of shredded cheese to help it all stick together.
- Top with the second tortilla and press down lightly.
- Cook until toasty and the cheese is melted through.
- Serve with reserved consomé.
