Ingredients (serves 1)

For the Barbacoa:

For the Salad Base:

  • 2 cups lettuce
  • 1 tomato, sliced
  • 2 tbsp chopped red onion
  • 2 tbsp cilantro
  • ¼ avocado, sliced
  • 2 tbsp sour cream (for topping)
  • Cotija cheese (optional)
  • 1 lime, cut into wedges

Instructions

  1. Pour the contents of the Beef Barbacoa pack into a microwave-safe bowl.
  2. Microwave for 60 seconds, or until heated through.
  3. Assemble your salad in a bowl. Add the warm barbacoa on top, followed by your favorite toppings.
  4. Squeeze fresh lime juice over the bowl before serving.
