Ingredients (serves 1)
For the Barbacoa:
- 1 pack Old Hacienda Beef Barbacoa
For the Salad Base:
- 2 cups lettuce
- 1 tomato, sliced
- 2 tbsp chopped red onion
- 2 tbsp cilantro
- ¼ avocado, sliced
- 2 tbsp sour cream (for topping)
- Cotija cheese (optional)
- 1 lime, cut into wedges
Instructions
- Pour the contents of the Beef Barbacoa pack into a microwave-safe bowl.
- Microwave for 60 seconds, or until heated through.
- Assemble your salad in a bowl. Add the warm barbacoa on top, followed by your favorite toppings.
- Squeeze fresh lime juice over the bowl before serving.
