Quesabirria

Quesabirria

Let’s be real: nothing feels more like a win than biting into a crispy, cheesy quesadilla that tastes like it came straight out of a restaurant kitchen, but only took you a few minutes.

This recipe turns their slow-cooked, flavor-packed birria into the ultimate at-home comfort food. All you need is a skillet, some tortillas, and a few toppings, and you’ve got yourself a meal that will make you feel like a pro chef without spending hours in the kitchen.

Ingredients (serves 2)

  • 1 pack Old Hacienda Beef Birria
  • Consomé (for dipping)
  • 4 tortillas (corn or flour - whatever you like best)
  • 1/4 cup Oaxaca cheese
  • 1/4 cup shredded Mexican blend cheese
  • 2 tbsp chopped onion
  • 2 tbsp fresh cilantro

Instructions

  1. If desired, heat up your Beef Birria until it’s hot and tender. Set aside. It's safe to eat right out of the pack, so you can also skip this step!
  2. Dip a tortilla into the consomé, then lay it down in a hot skillet.
  3. Add a layer of Oaxaca cheese, sprinkle on some shredded Mexican blend cheese, then pile on beef birria, onions, and cilantro.
  4. Fold in half and cook until the tortilla is crispy and golden and the cheese is perfectly melted.
  5. Serve with a little bowl of consomé for dipping and top with more onion and cilantro.
