Let’s be real: nothing feels more like a win than biting into a crispy, cheesy quesadilla that tastes like it came straight out of a restaurant kitchen, but only took you a few minutes.
This recipe turns their slow-cooked, flavor-packed birria into the ultimate at-home comfort food. All you need is a skillet, some tortillas, and a few toppings, and you’ve got yourself a meal that will make you feel like a pro chef without spending hours in the kitchen.
Ingredients (serves 2)
- 1 pack Old Hacienda Beef Birria
- Consomé (for dipping)
- 4 tortillas (corn or flour - whatever you like best)
- 1/4 cup Oaxaca cheese
- 1/4 cup shredded Mexican blend cheese
- 2 tbsp chopped onion
- 2 tbsp fresh cilantro
Instructions
- If desired, heat up your Beef Birria until it’s hot and tender. Set aside. It's safe to eat right out of the pack, so you can also skip this step!
- Dip a tortilla into the consomé, then lay it down in a hot skillet.
- Add a layer of Oaxaca cheese, sprinkle on some shredded Mexican blend cheese, then pile on beef birria, onions, and cilantro.
- Fold in half and cook until the tortilla is crispy and golden and the cheese is perfectly melted.
- Serve with a little bowl of consomé for dipping and top with more onion and cilantro.
