Switch up taco night with a fun, flavorful twist. These Taco-Stuffed Sweet Potatoes are hearty, vibrant, and come together quickly and effortlessly thanks to Old Hacienda’s ready-to-eat Beef Barbacoa.
The tender, saucy barbacoa pairs perfectly with the natural sweetness of roasted sweet potatoes—topped with all your favorite taco fixings for a meal that’s comforting yet fresh.
Ingredients
- 2 medium sweet potatoes
- 1 pack Old Hacienda Beef Barbacoa
- Shredded cheese (cheddar or Mexican blend)
- Guacamole
- Sour cream or Greek yogurt
- Fresh lime juice
- Diced onion
- Fresh cilantro, chopped
- Toasted pepitas (pumpkin seeds)
Instructions
- Bake the sweet potatoes at 400°F for 40–50 minutes until tender, or microwave for 6–8 minutes (turning halfway) until soft.
- While the sweet potatoes cook, heat the Beef Barbacoa according to package directions.
- Slice open each sweet potato and fluff the inside lightly with a fork.
- Top with the warm barbacoa, shredded cheese, guacamole, sour cream or Greek yogurt, a squeeze of lime, diced onion, fresh cilantro, and toasted pepitas.
