The tender, saucy barbacoa pairs perfectly with the natural sweetness of roasted sweet potatoes—topped with all your favorite taco fixings for a meal that's comforting yet fresh.
Ingredients

- •1 pack Old Hacienda Beef Barbacoa
- •Shredded cheese (cheddar or Mexican blend)
- •Guacamole
- •Sour cream or Greek yogurt
- •Fresh lime juice
- •Diced onion
- •Fresh cilantro, chopped
- •Toasted pepitas (pumpkin seeds)

Bake the sweet potatoes at 400°F for 40–50 minutes until tender, or microwave for 6–8 minutes (turning halfway) until soft.
